Cozy up with a warm bowl of soup! Hearty and healthy, this will be a staple during the winter!
1 T olive oil
1/2 white onion, diced
2 large carrots, peeled and diced
2 large celery stalks, diced
2 cloves garlic, minced
1 t salt
1/2 t pepper
6 cups organic vegetable broth
1 can cannellini beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
1/2 cup dried quinoa
1 can diced fire roasted tomatoes
1 can diced tomatoes with green chiles
2 cups chopped collard greens, remove stems
2 cups arugula
2 cups spinach
Sauté onion in olive oil until translucent. Add carrots and celery and sauté until soft. Add garlic, salt and pepper and cook 2 minutes, stirring so garlic doesn’t burn. Add vegetable broth, beans, quinoa, tomatoes. Bring to a boil, then reduce to low and gently simmer 15 minutes. Add greens, let wilt, stir together and serve.
