Cinco de Mayo parties can tempt you with sugary margaritas, cheese dip and greasy tacos! We’ve come up with the perfect taco solution to keep the party going and also keep you on track: Kale Tacos!

Directions:

Peel the kale from the stem and chop into medium sized pieces

Slice the onion into slivers

Saute the kale and onion in olive oil, salt and red pepper flakes on high heat until desired consistency

Remove from heat and squeeze half of a lemon onto the kale and onions

Serve kale and onion mixture into tortillas

Top with chopped avocado, goat cheese and cilantro then serve!
