A breakfast that will satisfy the whole family – huevos rancheros! Dress up boring eggs with this Mexican-style wrap full of healthy proteins, fats, veggies and herbs.
While we used some of our favorite ingredients, you can also throw in veggies left over from last night’s dinner and add more spice if you like.
Cook the black beans according to the package instructions
Thinly slice the pepper, onion and avocado
Chop the cilantro
Whisk the eggs and cook to your liking
Sautee the peppers and veggies with olive oil
Build your taco: eggs, beans, onions, peppers, salsa verde, avocado, cheese and cilantro
Garnish and enjoy!
